Gordon Ramsay Burns his Tortilla Cooking Breakfast with Richard Blais | Next Level Kitchen

Breakfast is served! This week on Next Level Kitchen Gordon and Richard Blais are taking a trip to Mexico by cooking up a Mexican inspired breakfast with some Huevos Rancheros and a Breakfast Burrito.​ Which dish are you cooking this weekend?

*Gordon’s* *Huevos* *Rancheros*
4 ounces chorizo, diced 
1 small zucchini, diced
1 small red bell pepper, diced 
1 small yellow onion, diced
Kosher salt
Freshly ground black pepper
1-2 tablespoons olive oil
2 tablespoons chopped cilantro
2 tablespoons smoked chipotle hot sauce
3 tablespoons canned chopped tomatoes
1 lime, zested  

*Black* *Beans*
2 tablespoons olive oil
1 15-ounce can black beans, drained
Kosher salt 

*Fried* *Eggs*
2 tablespoons butter
1 tablespoon olive oil
4 eggs
2 teaspoons paprika 
Kosher salt
Freshly ground black pepper

*Assembly*
4 small corn tortillas
1 avocado, diced 
4 ounces crumbled feta or cotija 

*PROCEDURE*
1. Make the sauce: In a large skillet over medium heat, add the chorizo and cook until the fat begins to render. 
2. To the pan, add the zucchini, red pepper and onion. Season the mixture with salt and pepper and stir to combine. If the pan seems dry and your chorizo does not render enough fat, add a little oil to the pan to coat the vegetables and help them to
3. To the pan, add the cilantro and hot sauce and stir to combine. 
4. Add the chopped tomatoes and finish with lime zest. Continue cooking until the vegetables have softened and the mixture has thickened. 
5. Cook the beans: In a small skillet over medium heat, add the oil. Once the oil is shimmering, add the beans and cook until slightly crispy on the outside and soft on the inside. Season the beans with salt.
6. Fry the eggs: In a small skillet over medium high heat, add the butter and oil. Once the butter has melted completely.
7. Add the eggs to the pan and cook until the whites have cooked through. Season with paprika, salt and pepper. 
8. Assemble: Grill the tortillas and divide between two plates. Layer each plate with the  vegetables, beans, eggs, avocado and cheese.

*Richard’s* *California* *Breakfast* *Burrito* *Potatoes*
4 ounces bacon, diced 
1 pound steamed fingerling potatoes, halved

*Pico* *de* *Gallo*
4 roma tomatoes, diced 
1 small red onion, diced 
1 jalapeno, seeded and minced 
1 lime, juiced
2 tablespoons chopped cilantro
2 teaspoons kosher salt 

*Scrambled* *eggs*
2 tablespoons butter
4 eggs, whisked 
Kosher salt 
Freshly ground black pepper 

*Assembly*
2 large flour tortillas 
4 ounces shredded cheddar
1 avocado, diced 

*PROCEDURE*
1. Cook the potatoes: In a large skillet over medium heat, add the bacon and cook until the fat begins to render. Add
2. the potatoes to the skillet and cook until the bacon is crispy.
3. Make the pico de gallo: In a small bowl, mix together the tomatoes, red onion, jalapeno, lime juice and cilantro.
4. Season with salt and set aside. 
5. Scramble the eggs: In a small skillet over medium heat, melt the butter. Add the eggs to the pan and cook until the
6. eggs are softly scrambled. Season with salt and pepper. 
7.  Assemble: Warm the tortillas and divide between two plates. Layer the tortillas with bacon, potatoes, eggs, cheddar, pico de gallo and avocado.

    I’m just in shock, I usually love what Ramsey does, but this WAS NOT huevos rancheros, absolutely no Mexican prepares sauce like that, those beans were an absolute disgrace, dry AF, it makes me wonder if he have actually tried that dish, we never use feta cheese, and all that vegetable mixture under the egg is just something I have NEVER seen done in any Mexican kitchen. I respect if he wants to create his own version of a similar dish, but don’t call that huevos rancheros, please.This time is an absolute no.

    I am Mexican so when chef Ramsay said he was gonna cook Mexican food I kinda panicked cuz I didn’t know where he would take it, but his take on mexican food gives it some unique twists that aren’t really mexican tradition but they still sound delicious

    As someone who’s Mexican, the problem is that they’re over complicating it. Huevos rancheros is about simple ingredients used well.

    The variation I’m familiar with is a fried egg with a slightly runny yolk. You put a sauce over it made with roasted tomatoes, Serrano chilies(with the seeds), and sliced onions.

    You only need salt for seasoning.

    Again, simple. You can pair it with a slightly charred tortilla

    Sorry love u Mr Ramsey but I’m mexican and we don’t do that mix that is not real mexican food , why do you accept to mix as california is like taco bell we never use yellow cheese , we use fresh cheese or panela , if you travel all around the world find out the real and so rich mexican cuisine depending on the state you’re ❤

*Recipe*
Paprika Garlic Shrimp
(With Warm Mediterranean Quinoa with Sautéed Vegetables)

Servings: 2
Ingredients:
1 lb jumbo shrimp, peeled and deveined
2 tablespoons kosher salt
Large pinch of ground black pepper
1 ½ teaspoon smoked paprika
3 tablespoons I Can’t Believe It’s Not Butter Extra Creamy stick, divided
1 large clove of garlic, grated or minced
1/4 teaspoon red pepper flakes (optional for heat)
2 tablespoons lemon juice and 2 teaspoons of zest
2 teaspoons chopped fresh parsley

Quinoa and Vegetables

Ingredients
1 cup cooked quinoa
1 cup water
4 tbsp I Can’t Believe It’s Not Butter Extra Creamy salted stick,
2 cloves garlic, grated or minced
1/2 small zucchini, diced
1/4 red bell pepper, diced
1/4 small eggplant, diced
1/4 red onion, diced
1/2 can (15 oz) chickpeas, drained and rinsed
3 sprigs of fresh oregano or 1 tsp dried oregano
1/4 cup Kalamata olives, sliced into quarters
4 tablespoons of fresh parsley, roughly chopped
Juice of 1 lemon

Instructions:
• Begin by making your seasoning salt, in a small bowl, mix your salt, paprika and black pepper and mix thoroughly

• For the shrimp, in a bowl or on a plate, season with a large pinch or 1 tablespoon of your seasoning salt and toss with the shrimp so it coats the shrimp evenly.

• In a large skillet, heat 3 tablespoons of I Can’t Believe It’s Not Butter Extra Creamy Stick over medium heat. Add shrimp in a single layer and cook for 1 minute.

• Flip the shrimp to cook the other side and add the garlic and red pepper flakes, sauté until fragrant, about 1 minute.

• Finish with the remaining 2 tablespoons I Can’t Believe It’s Not Butter Extra Creamy Stick, lemon and parsley and toss or stir until melted through and set aside off the burner.

• In a skillet, heat I Can’t Believe It’s Not Butter Extra Creamy stick, onion, zucchini, bell pepper, eggplant and garlic. Season with a pinch of the seasoning salt mixture. Saute until tender, about 7–8 minutes.

• Add in chickpeas and oregano and toss. Then add the quinoa and 1 tablespoon of the warm butter from the shrimp pan and toss until heated through.

• Spoon Quinoa on plate and top with Paprika shrimp. Finish with lemon juice and parsley.
