American Blueberry Muffins | Sorted Food

Never mess with an classic. Everyone has own recipe for this and we’re keeping it simple and all about the blueberries. Oh and brown sugar over the top just before baking is a must.

    Tip: if you don’t want all your blueberries to sink to the bottom, Lightly (very lightly) dust them in flour, also works with chocolate chips

    Ingredients
    350 g plain flour
    3 tsp baking powder
    1 generous pinch salt
    200 g vanilla caster sugar
    2 eggs
    240 ml buttermilk
    120 ml sunflower oil
    1 tsp vanilla extract
    225 g blueberries
    1 tbsp demerara sugar

    I love this recipe, did it like 4 or 5 times and they came out perfectly. Yesterday instead of the vanilla and the blueberry's, I put 120g of melted nutella heated in the microwave, they came out so good. I made a nutella cream after all to cover them with it. It tasted even better. Keep it up guys

    So this is the first time I've used this recipe. It was between this one and another recipe on You tube. But unfortunately I have to say it did not turn out the way I would have liked them too. My first critisim would be the look of them. They haven't got the nice rounded dome top. They look much like the picture (quite flat.) when making muffins I normally use self raising amd this is the first time I've used plain plus baking powder. But I will say they did rise. Just didn't get the crackling on top. However the flavouring is quite nice.

    This might be a recipe that I would need to practise every now and then with. 6/10 from me.

    If anyone is planning on making these for a special occasion, make them before hand so you know this is the recipe for you. I was going to take these for work tomorrow for a fundraising event but I don't think I can now. Oh well.

    What is a demarara sugar? Can I substitute it with muscovado or Coco sugar or plain brown sugar if I can't find demarara?

    I cry. I used frozen blueberries and it made it blue. Still chucked it in the oven, didn't have the blueberry taste and looked unappetising.

    good hint is to coat your bloobs in flour first so they don't sink in the batter and they stay well distributed.

    The proper way to eat a muffin: First remove the top. Then peel off the paper and divide the stump into quarters. After eating the stump, then move on to the cherished muffin top, and also divide into quarters and then eat. Repeat as necessary.

    JUST MADE THEM!!! Hot out of the oven and bursting with blueberry goodness. Used cake flour though and mine def made more than 10. Made 12 with extra I put in the fridge.

    sugar is considered a wet ingredient in american cooking, also instead of oil, you can use shortening same weight or measure, try creaming the eggs, sugar, vanilla and shortening together before adding the dry ingredients. also lumpy batter is good for all other muffins, biscuit, and shortcakes
