Ginger and coriander in tuna? Hmmmm? Both are questionable to me. More so ginger. That being said I have never tried either in my tuna salad (mainly because my simple tuna salad recipe is already perfect in my mind/taste buds.)
I may try the coriander and even the ginger just to see if it ups my recipe level. I don't think it will though. Gordon did say KEEP it SIMPLE!
My recipe is simple. SOLID WHITE ALBACORE (in oil or water) properly drained. Medium to finely diced onion(depends on your crunch level preferences,) an appropriate amount of mayo, and salt and pepper to taste. (if you like a little heat don't fear a tiny dash of cayenne powder.) Mix it well, slap it on your favorite buttered bread and you're good to go.
If you want to up the flavour/texture game to your sandwich, add a thin slice of Gouda cheese and thinly sliced dill pickle. (Note: if you like the pickle idea, instead of slices you could finely chop some dill pickle and mix them in the tuna salad mixture. That all boils down to your preference though. Slices added to the sandwich will provide more crunch than it will if you finely chop it and incorporate it into the salad mixture.

Sorry the tuna in the sieve made me laugh. Don't bother with the sieve! Just open the can and then push down on the lid and drain the liquid into a sink. Like Gordon says about the sieve don't push to hard and take out too much liquid as it will make the tuna dry. That being said, no need for a sieve. Also, I'm adamant the best tuna is Solid White Albacore in water or oil. Any other canned tuna pails in comparison. There is a reason it is the most expensive can on the local supermarket's shelves. Even flaked Albacore is not as good as solid Albacore. If you want the best tuna salad sandwich, always get SOLID WHITE ALBACORE in water or oil. I prefer mine in water but oil works just as well and can add a unique flavour/texture. No matter which you choose, you need to drain precisely. You don't want a lot of water/oil left in the tuna but you also don't want barely any or none.
