you cant burn water, you can however reduce the water so much that the only thing left is the minerals from the water, and that can burn.

AFAIK, you can't burn water. It's just evaporating and leaving the minerals and pot to burn. There's probably some kind of scientific way to actually burn water, but if you're just talking about burning water at home, in your kitchen, on your stove, no. Also, I would love to see a series where Ben takes te normals' failures and not only fixes them, but upgrades them.

Scientifically speaking Barry is correct that water can’t be burned because it doesn’t burn at any temperature, but technically speaking Jamie is kind of correct because surely evaporated water is water that’s been burned because it is no longer a liquid 😂😂 I’m not scientifically minded by any stretch of the imagination but I’d consider steam as burnt water because it’s been taken to a temperature where it no longer exists in the same state of matter before being heated 😂

I'm sorry but that information from the book tilts me beyond reason. First xiaolongbao or soup dumpling been famous before Ding Tai Feng even existed. And to make matter worse Ding Tai Feng's version sucks. For some forsaken reason their filling is scatter instead of on solid meat like every normal xiaolongbao. It's literally famous due to its rapid expansion but most people who been eating xiaolongbao for a long time don't consider it a good version at all.

no jamie – you can not burn water on a kitchen stove… the water will boil and evaporate
what can burn is stuff that might be solved in the water… and only once all the water evaporated, because water can, under normal stovetop conditions, not be heated above its boiling point, so it keeps that temperature constant – even at full blast

I used to be a Kitchen manager at the Glendale location of Din Tai Fung. The Bao Buns are better than the soup dumplings. EDIT: If you stretch the dough as you fold you will get better dumplings. A lot of it is in how you pinch it and stretch it. Once you get it, you get it, if that makes sense. It takes a lot of practice.

You can't burn water, but you CAN leave it on the hob until it all evaporates and the smell of glowing hot metal tears you away from the TV to find it, panic, and put the way-hotter-than-normal pan on your cherry wood counter top where it will immediately burn a ring into the wood which you will then have to learn how to sand off with specially purchased machinery in one weekend before your parents come home and see it and say "I told you so" which would be insufferable after all your insisting that the counter top could take a hot pot off the hob no problem, which IS correct, except in extreme circumstances when easily distracted idiots forget about the pot on the stove and let all the liquid evaporate away and the pot get much hotter than the boiling point of water.
Aaaaaaanyway, you can't burn water. And you CAN resurface a wooden counter top, but you have to do the entire thing, and it's a lot of work.

Does water burn: Well, sort of but your talking in excess of 2000 Kelvin and I don't think even Barry can leave the hob on long enough to achieve that kind of heat.🙂

If it's hard water and you boil it for too long and keep replenishing, then yes, I suppose the overcooking has changed the composition.
But no, you can't strictly "burn" it.

I live in Taiwan and I have to say that Din Tai Fung's xiao long bao is extremely overrated. I've had better at much smaller and cheaper places. Way over priced, way over hyped and better skipped for other places.

You can make water taste "off" by boiling it too long. The gasses in the water boil off (interestingly, for gasses, higher temperature can reduce solubility). This can give it a flat taste compared to regular, unboiled water.

I lit my stove on fire while boiling water. Somebody left grease all over the stove and it caught. Water tasted fine though.

Traditionally, the dumpling walls should be paper thin. Incredibly delicate and my mom always says that if you're paranoid your chopsticks will pierce it, you're doing it right. Picking it up from the basket and onto your soup spoon should be like surgery. God I love these things. Ate so many growing up.

By "burn water" do you mean when you leave the pot of water on the stove and forget it and then the water boils away and the bottom of the pot becomes black.

You can't burn pure water, which is why we use it to put out fires instead of starting them. You can, however, break it down into hydrogen and oxygen by putting energy into it, in the form of an electric current.

Watching them roll the dumpling wrappers like that and I'm feeling like O.O my auntie would have shooed them out of the kitchen XD pleating dumplings is just lots of practice and perseverance (or maybe one of those little dumpling pleating gadgets but I have no idea how good they are)
