i like my steak medium well done and other than that teacher i like a good bit of char and crunch on mine.
i don't really care about what cut it is, just that there is plenty. Rib-Eye can be good though . .

A good Steak does not need Sauce.
Maybe a little bit of Garlic Herbal Butter. Salt and Pepper to taste.
Otherwise just something to soak up the juces.
And. Nothing. Else.

Europeans and steak… I do not like it, they do almost everything else better but they lose 100% of the time on steak. it looks sad small, and grey. I love everything else these guys do but this has let me down.

The funny thing here is. The only thing that went slightly wrong with James' steak are the things that the Chef told him to do but he didnt listen. That said im stubborn too. I do use salt before and do the peper after so it doesnt burn. I also like a flat pan for more crust rather than diamonds.

This is where I’m lucky to live in the US, until recently steak was relatively affordable and I’ve been able to cook it fairly frequently, but watching a chef freak about something I feel relatively confident about is really strange.

Every time James pronounces bain marie as in pain, instead of as in ban. I know it is a steak challenge bit for amazing chips. Cut them into equal sizes. Rinse them under cold tap for five minutes to reduce starch. Boil until they are getting fluffy outside. Dry off for about 25 minutes. Using duck fat or beef dripping, first fry at 150c. They start to colour. Leave to cool. Second fry at 180c until outside is golden and crispy

For a very amateur chef like me, cooking steak sous-vide is hard to beat.
No skill at all, 40 mins in the water bath then sear in no-longer-bubbling butter.
Always right, all the way through from edge to edge, with none of the "is it medium rare or is it medium" shenanigans.

My favourite cut of beef is not a steak at all. I just go limp and hard at the same time when served (or have prepared) an excellent standing rib roast with a delicious wine and mushroom sauce and puffy, crispy Yorkshire puddings. Vegetables are optional. Where's the beef?

I know this is an old video now, but it bears saying: Grill lines are for absolute chumps. The best part of a good steak is the crust. That's where all the flavour is. Grill lines are for American steakhouse chains, not for anyone who calls themselves a "chef" — Thankfully I've seen you guys cook a much better steak since this clown show.
