Just tried out Mike's cookies using the recipe in the description and I have a few pointers.
The recipe says it makes 14, 100g cookies. Using 80g cookies i only managed to get 11.
Also when you are buying the dark chocolate, spend a little extra to get a good one.

Overall though still an excellent cookie, excited to try Ben's next to compare for myself.

I feel like B is what I want when I want a treat of a cookie, whereas A is a classic cookie and will probably dip in milk better.

    My choice is B…

I'm going to be honest, Mike's cookies were so completely unappealing to me. I probably wouldn't like Ben's either simply for the chocolate (hate dark chocolate), but I really really dislike getting food on my hands. All the chocolate Mike's used would be an absolute nightmare and his cookies just look all too rich.

Did I hear wrong, or did Ben say "before you start to knead it properly" about cookie dough?!

I can tell just through the screen that I would be making myself sick on Mike's cookies from eating so many.
Also, Jamie deserves a cookie-judging badge for this, Ben! Did you see the lengths he went to, Ben?? Pro 👏 absolute pro 👏

i've only "baked" cookies twice, both were using premade dough in my trusty Slow Cooker making Giant Cookies.

4:52 I understand what Mike is doing, but I cannot stand white chocolate chunks or chips in a cookie. It is just too sweet. I use dark and milk chips, brown butter, and toasted pecans.😋😋😋 6:58 oh…I also let it rest in the fridge before baking.

What if you split Ben’s beurre noisette BEFORE adding the sugar. Beat white sugar into one half and brown sugar into the other half. Mix your chocolate into each half, maybe even put dark chocolate in the white sugar and dulce de leche chips into the brown sugar one. Chill the doughs overnight still split and then marble the two doughs together while they are still cold. Might have a cool multi textured effect in the cookies!

I've tried to make Mike's cookies 3 times and they aren't turning out good. I'm not sure what it is, but my boyfriend and I have both tried and something isn't right 🤔 has anyone else had good luck with this recipe?

If I saw Ben's cookie, I would think it would be a crispy cookie and probably wouldn't even try it. My mouth started watering at Mike's cookie.

I would prefer Ben’s cookies, more like my grandmothers. I don’t make chocolate chips cookies often, I add nutmeg like my gran did.

The cookie itself is so sweet, I think Ben's choice of 70% chocolate would be my pick.

I use the original Toll House recipe, with just a couple of variations: half solid vegetable shortening/half butter, and 1/2 c whole wheat flour in addition to the all-purpose. No chilling needed. Crisp edges and chewy middles–the perfect chocolate chip cookie. Bonus: this dough keeps well in the fridge, so they can be freshly baked in 2s or 3s in the toaster oven for a treat anytime!

reading through the recipe for mike's and have a couple questions:

    1. how many grams of salt is the 1 tsp? (or what salt did you use)
Why I'm asking: 1 tsp of table salt is 2x 1 tsp coarse salt vs other salt

    2. What was the cocoa content of the 3 different chocolates he used?(dark and milk)

My grandma used to make the best chocolate chip cookies EVER. She said she followed the Tollhouse Cookie recipe exactly with one exception. She put double the amount of butter the recipe called for. She would freeze the cookies afterwards and when you took them out of the freezer you could still bend them without them breaking. Obviously they were a flatter cookie because of all the butter but they were GREAT. They made the best ice cream sandwich using those cookies as well.
