🗝️ Pot Roast
3-4 lb Chuck Roast
3 large carrots, chopped
3 large stalks celery, chopped
3 potatoes, peeled and cut in large chunks
1 onion, coarsely chopped
1 packed onion soup mix
salt and pepper
1 Tbsp flour
oil for cooking

Season the chuck roast with salt and pepper. Coat in flour. Sear in a hot pan with oil until all sides are brown, about 5 minutes total. In the bottom of a slow cooker, place the onions and potatoes. Place the chuck roast on top and then place the carrots, celery, onion soup mix and any juices from the pan. Cook on low for 8 hours.
