Sorry Gordon but your pancakes are too thin to be called American. If you want them fluffy make the mixture thicker don't over mix. It should be clumpy and let sit for 10 minutes. The bananas look great.

You dont cook pancakes in light oil, use butter or bacon grease. And no water, just buttermilk, and dont sift the flour and mix it too smooth.

On the contrary, when making pancakes, its perfectly fine to have a very lumpy batter. Trying to get the batter to be super smooth means you run the risk of overmixing and developing to much gluten, which will give you rubbery, dense pancakes.
