    I wouldn't use lemon acid on red fish as it bleaches the color. In my culture we have been fishing salmon for generations. We poach fish in water and salt. Naturell. Well. The quality of our fish is world class hence naturell. Let the fish speak for itselves.

    So simple, and it turned out beautifully! ❤️ Served with whipped golden yams and my personal pasta salad. Color contrast not so good but flavors were amazing!

    Made this. Didn’t like it. I don’t have an Aga or a big fish kettle. I cook whole salmon (or large fillets ) in a bag in the dishwasher. Served with home made dill pickled cucumber, a boiled egg, mayonnaise and Paul Rankin soda bread it is delicious.

    I think I fucked up somewhere, I followed the instructions, poached the salmon, but when I pulled it out, it wasn't a turkey. 🤷‍♀️

    Btw, substitute tarragon vinegar by just eliminating it and throw in tarragon sprigs. White wine is acidic enough. If you have to be anal about it, just infuse white vinegar with tarragon sprigs. Boil the vinegar, bruise up the sprigs with a spoon, put the sprigs in a clean jar, pour the hot vinegar over the sprigs, and let it sit for a couple weeks in a dark area for the flavors to infuse and then keep it on hand for the next time you wanna poach fish the Ramsay way 😊

    If you put that fish in boiling water for 4 minutes it will be overcooked. 185° for about 3-4 minutes or indefinitely at 145° I use an electric skillet, the square one from the 1970's. That way I never overcook and can compensate for different size and shapes of the pieces.
