    Dear Gordon,

I think you're fucking with it too much for scrambled eggs. Furthermore, I'm not sure if you're aware how well mayo goes with eggs. I don't know if it's well popularized globally, so I'm going to share it with you.

In Poland, we use mayo for the boiled eggs. It fits just perfectly. You can try it.

Hard-boil eggs. The yolk can't be runny, but it can be a little bit soft, 7–8 minutes. Mix chopped dill with mayonnaise. Peel the eggs and cut them lengthwise into half or into fours. Add just a little mayo to each, using a teaspoon. Eat an appetizer using your bare hands. During Easter, you should clink it with each other like cheers. You can add a bit of lemon pepper for a sexy vibe. You can also make it like a cocktail sauce, adding like one teaspoon of a sour cream and one teaspoon of ketchup to the mayo.

Now for the scrambled eggs. You should try it.

Mix the eggs well with a little milk or cream. Heat the butter in a pan with a bit of rapeseed oil, which has a nice color, or olive oil for frying. This will prevent the butter from burning. Heat while stirring, and remove from heat only while seasoning with salt and finely ground pepper. You can use dried spices with a mixture of onion, garlic, parsley, chives, nutmeg and sweet pepper. But above all, at the end, add a teaspoon of mayonnaise instead of crème fraîche. You will get an effect identical to yours, except that it will take you three minutes.

Another well-known method is Russian-style scrambled eggs. It was fried in melted brawn and glazed onion slices. In a very hot pan, the cooked egg was stirred diagonally only twice. I prepared it differently. I don't use brawn, only torn ham with any fat. When the egg whites set, I gently mixed the whole thing. Such scrambled eggs are nutritious and well cooked.

I wish I had a Michelin star one day.

    Sincerely,

    Jody

You can stir all you want. Heck I’ve stirred till my arm felt like it would fall off. Good luck getting a perfectly homogenous yellow following this process (or Marco’s) or any chef who advises against whisking before putting into pan – what you’ll end up with is bits of yellow and white (heterogeneous scrambled eggs).

This is my first recipe made ever as a 16 year old and i absolutely loved it!!

however i didnt have any cream on hand so i just tried mixing it well, the butter did a remarkable job at keeping it creamy and fluffy, youd be surprised how much carryover heat cooks the egg and i found this lovely with toasted chroissant and white bread.

however i do believe adding the salmon to the egg mixture wouldve been smarter as the cold salmon cooled the egg down a bit despite being on hot toast.

It was probably 11 years ago that I showed this video to my Dad on Christmas Eve. It was early in the morning but he really liked it, thought it was something we should do, so I went out, picked up croissants, smoked salmon and more eggs. I remember the next day we were playing the video as he cooked along.
When he first tried it, he actually exclaimed, "Oh my GOD!"
It's now become a tradition in our family on Christmas.
    Thanks for this, Gordon.

Have you ever added sesame oil to your scrambled eggs? I do it all time, the flavours work really well together, along with a bit of salt and pepper.
