The potatoes here are not mashed but if you see Heston recipe potatoes are mashed here the size of the potatoes are rightly cut that's were the roast potatoes WILL be perfect in oven !

I agree with spices and bake time,although you won’t get the crispiness from such large chunks..IMO. I always cut different sized portions because some like crispy and some not,so you please both.
