    Made this and it was absolutely great. tasted the sauce halfway through and it almost blew my mouth off but by the end of the cooking the flavours had really developed and the sauce was delicious

    Very tasty, but some issues. Most of the lamb doesn't pick up any of the flavors. IMO, the notion to save the sear doesn't work. Let it incorporate. It needs to be flipped, and maybe even injected. Still, a really good dish.

    You didn't cover it while it was in the oven causing the meat to shrink and becomes stiff. You need a lesson about how to cook lamb shank from Arabian chefs.
