    Why is he making the 2 incision cuts horizontally? Its pointless, the natural structure of the onion doesn't require it 🤷‍♂️

    Okay, this is the longest I've actually seen someone take to dice and onion on film so far.
    MY method depends on a sharp German steel knife that I care for and allows me these cuts without making those intersectional cuts before going for the chop.
    I chop she root FIRST; then, I make 4-12 cuts between the edges of the WIDTH, not the length going towards the root depending the fineness of dice, then I make 4-20 cuts ALONG the length, meaning I do my final chop WITH the grain of the fibers so it glides like butter and tuning my size of dice is 400% simpler at that point. Choose between medium dice, or shave it fiber by fiber; just don't forget to flip your last quarter 90⁰ on its side depending on your dexterity before teetering the last slice at 1/3 speed while 1/4 of an inch of raw onion depends on your stillness of hand to either completely obliterate your confidence, or completely reassure your artistic ability in an instant. Now do this 84 times FAST. That's the 50 lbs of onions I diced between 8:15 and 9:10 Wednesday morning.

    Hi Gordon, In your opinion, why is it that this technique for dicing onions in 3 steps completely ignores the fact that the onion already is made up of thin layers? What I like to do is start by halving the onion in the same way you did (north to south pole latitudes or root to stalk), but then slice it in half-circles meridians, in that way the second and last step is slicing those meridians cross-wise to perfectly uniform tiny squares. In this way the knife always works in the natural upstand position, without making any horizontal cuts. Hope I made myself clear. Really eager yo read your profesional comment.
