    I just saw uncle Roger’s review of this, and I have some thoughts as a home cook after having lived in Japan for 15 years.

    When it comes to Japanese cuisine the Japanese are very open to adopting and adapting new flavors. Certainly, it’s difficult to find this style of ramen at a shop in Japan, but when I checked the mother of all Japanese home cooking cookbooks: Cook Pad, the ingredients list checks out.

    Here is a recipe for a homemade ramen soup base used in Japan:

    Soup Base 1: Chicken broth
    だし取り:鶏がらスープ
    (Dashi Tori: Torigara Soup)
    (Chinese equivalent to chicken bullion)
    1. 1500 ml water
    2. Chicken Wing tips 350 grams
    3. Sliced shiitake mushrooms 5 grams
    4. Ginger 30-40 grams
    5. Garlic 1-2 cloves
    6. Onion 1/2

    Soup Base 2: Fish Broth:
    1. Water 1200 ml
    2. Mixed Kezuribushi (fish flakes) 50 grams
    3. Dried sardines 50 grams
    4. Kelp 5 grams

    Final flavoring to use after combining the chicken and fish broths:
    Soy Sauce: 3 tbsp soy sauce
    Mirin: 2 tbsp (You can add 1/2 tbsp sugar to white wine or rice vinegar if you can’t get this.)
    5. Sugar 2 tsp
    6. Salt 1 1/2 tsp

    If you’re making the soup at home it’s recommended that you combine the wing tips, fish flakes, and Japanese dashi made from the kelp.

    Making the chicken soup base: (cooking time 40 minutes)
    1. Cut the onion in half, or if it's large, cut it in half.
    2. Cut the ginger with its skin into 5mm-wide pieces (cutting the fibers).
    3. Cut the garlic in half lengthwise, and remove any large sprouts.

    4. Add onions, ginger, garlic, sliced ​​dried shiitake mushrooms, and the green part of green onions to 1500ml of water and heat over high heat (you can also use celery or other ingredients instead of green onions if you like).
    5. When it comes to a boil, add the chicken wings and remove any scum that comes out.
    6. Once most of the scum has been removed, turn the heat slightly higher than low and simmer for 40 minutes, keeping the soup slightly boiling.
    7. About 20 to 30% of the soup evaporates, creating a thick soup stock. When this happens, turn off the fire.

    To make the fish stock soup base:
    1. Combine 1,200 ml of water, kelp, and dried sardines in a pot and let it sit for about 10 minutes until the soup stock comes out easily, then heat over high heat.
    2. When it boils, add the fish flakes and submerge it with chopsticks. When it comes to a boil again, some scum will come out, so scoop it out with a ladle.
    3. Once most of the scum has been removed, turn the heat slightly higher than low and simmer for 30 minutes, keeping the soup slightly boiling.
    4. About 20 to 30% of the soup evaporates, creating a thick soup stock. When this happens, turn off the fire.

    Making ramen broth:
    1. Once you've finished making the dashi, you can simply strain both soups through a strainer, but it's best to use chopsticks to remove the chicken wings from the dashi. (You can season and eat them.)
    2. Combine the two types of soup stock in one pot, season with the final flavoring ingredients listed above, and make ramen soup.

    When the soup is done just add noodles and the toppings you want.

    Also, there are different kinds of noodle thicknesses is Japan. The kinds of noodles used in Japan are: soba, udon, ramen, spaghetti, somen, etc, so I can’t understand why Nigel would say Gordon’s choice of noodles is wrong. To me egg noodles are a natural choice for ramen.

    If every profession in the world had a Gordon Ramsay as an instructor we would be on our way to making a Dyson sphere.

    The way he prompts while cooking makes cooking look and feel like not cooking it quite literally becomes an art. Either that or we need to change the definition of art.

    I lived on chicken flavoured Supernoodles with grated cheese on top for like two years when I was a student. It was my go-to meal every day. Sometimes I'd add a sliced up hot dog to it if I was feeling 'fancy'.

    These chefs that made a lot of money like Gordon and Jamie have seriously lost their way as chefs. They just make stuff up as they go along. It’s sad to see that the money corrupted them and they just don’t care anymore. If this was served in a Japanese restaurant people would be disgusted. Shame Gordon
